Mandi is a traditional Mediterranean dish, that originated in Hadhramaut. It is very popular in the Eastern Mediterranean countries and the Levant area. It is a perfectly spiced succulent chicken, layered on top of glistening yellow rice and garnished with almonds and raisins.
Using Adonis® Marinade
Using Adonis® Mandi Marinade you can easily and quickly prepare the authentic traditional Chicken Mandi. It’s really easier to make than you think with the ready marinade by Adonis® and following the below recipe.
Chicken Mandi
Ingredients

1 Pouch Adonis® Mandi Marinade

3 lb chicken
-
2 cups Basmati rice
-
30 g butter or 2 tbsp vegetable oil

8 cloves garlic, minced
-
3 cups chicken stock or water
-
Salt to taste

¼ cup roasted almonds to garnish
Directions

Marinate the chicken:
Mix the contents of the Adonis® Mandi Marinade pouch with 3 lb of chicken. Cover and keep in the refrigerator for 30 minutes to allow the meat to absorb the marinade.

Wash the rice:
In a sieve, wash the rice until the water runs clear.

Precook the chicken:
In a non-stick pot melt the butter or heat the vegetable oil then add the chicken pieces with the marinade and cook over medium heat for 5 minutes. Add the garlic cook for 2-3 minutes then add the chicken stock or water.

Cook the chicken:
Cover tightly and bring to a boil then simmer until the chicken is tender.

Add the rice:
Add the rice on top and the salt then cook on low heat for 25 minutes. Turn off the heat and leave the rice in the covered pot for 10 minutes.

Garnish:
Serve with roasted almonds on top (optional).
